Originally, the Bee’s Knees drink was created to mask the taste of bathtub gin made during Prohibition.
2 oz gin
3/4 oz Honey syrup (To make, use equal parts honey and water. Warm the two in the microwave or the stovetop until they whisk nicely together; otherwise the honey will clump in the shaker). Leftover honey simple syrup keeps in the fridge for more than a week.
3/4 oz fresh lemon juice
Twist of lemon
Shake all ingredients together in shaker with ice. Strain into a chilled martini glass, add a twist of lemon, and serve. Enjoy!

2 Ounces Mezcal
1 Ounce Lime
1 Ounce Simple Syrup (or Agave Syrup)
1/2 Ounce Shiraz or Malbec
Mix Mezcal, lime, and simple syrup into a cocktail shaker. Fill with ice and shake well. Strain into a rocks glass filled with fresh ice. Gently pour 1/2 ounce of Malbec or Shiraz over the back of a spoon held just above the drinks surface so the wine floats on top.

1 Ounce Lime
1 Ounce Simple Syrup (or Agave Syrup)
1/2 Ounce Cranberry Juice
Mix club soda, lime, and simple syrup in a rocks glass and stir well. Fill with ice and gently pour the cranberry juice over the back of a spoon so it floats on top.

2 ounces vodka
½ ounce fresh lime juice (about ½ medium lime)
4 ounces ginger beer
Lime wedge, for garnish
Fill a copper mug or similarly sized glass with ice. Pour in the vodka and lime juice. Fill the glass with ginger beer and gently swirl it with a spoon once to mix.
Garnish with a lime wedge, and enjoy!
